Originally from Queensland and having completed 4 years as sous chef for vue de monde, Amaru took a year of planning, from design to location, before landing on High Street Armadale.
Asked why High Street, Clinton responds, “most high end restaurants are found in the Melbourne CBD. I wanted to offer a high end, contemporary dining experience which was missing in the affluental suburb of Armadale. Somewhere locals could go for a fine dining experience without having to leave the area”.
So what can you expect when dining at Amaru? Think sophisticated soft palette, customised felt chairs from Italy, tables specially commissioned by an Australia local design, rendered concrete walls and dimmed lighting for a soft ambience.
The menu is prepared using local high end product with flavours you wouldn’t necessarily pair together, coupled with the clever use of ingredients and seasonings to create a unique taste sensation. With an ever evolving menu, and catering to dietary requests, there is something on offer to suit all tastes.
Earning themselves the title of the only One Hatted Restaurant in Armadale (Good Food Guide 2017), Amaru has also recently won Australian Best New Restaurant 2016 by Gault & Millau.
In his spare time Clinton enjoys spending family time with his partner and daughter. “As a family tradition we usually go for yum cha Sunday lunch and mostly eat out on the weekends.”
